Coconut Chocolate Chip Cookies #SweetCreations

It’s the season for baking and the Martinez family has been working hard in the kitchen making goodies. My daughter and I have been making all kinds of things and some haven’t turned out so great but these coconut chocolate chip cookies are heavenly. My favorite part of these cookies, besides the taste, is they are made with coconut palm sugar, so they won’t spike your blood sugar like traditional chocolate chip cookies.

While I haven’t used them all, such as the cookie cutters, I had the chance to use the cookie sheets, bowls, and other items. We really like chocolate chip cookies and lately I have been wanting Paradise Bakery but they closed in our area a couple years ago. These are my take on their Coconut Chocolate Chip cookies.

But first, I’ve got a little secret. I have never owned a nice set of sweet mixing bowls. From the time I became married until now, I have been using The Dollar Tree bowls. They are cheap and they crack easily, so you can’t put them in the dishwasher or you risk them breaking in two. I was delighted to receive a set of mixing bowls from Good Cook. They really hooked this momma up with all the cookie goodies they gave me! These bowls are great. I really love their smooth texture and dough slides of the sides very easily when mixing with the high temp spatula. What is really neat about these is the bottom of the bowl. It has a rubberized bottom that makes the bowl stay steady when mixing.

Now for the recipe! Toasted coconut, premium chocolate chips, coconut palm sugar…YUMMO!

1 1/2 cups sifted white flour
1/2 cup coconut palm sugar
1 tsp vanilla
1/2 tsp baking powder
1/2 tsp baking soda
1/2 cup toasted sweetened coconut flakes
1 cup chocolate chips
1 stick unsalted butter
2 eggs

Mix dry ingredients and then add butter and fold in, add eggs and vanilla and mix thoroughly. We used a Good Cook Cookie Dropper to drop cookie dough evenly onto cookie sheets. Bake on 350 for 20-25 minutes or until cookies are golden brown. Cookies come off cookie sheets easily with the Good Cook Flex Cookie Turner
