Zucchini Noodles With Fresh Basil Pesto in 15 Minutes or Less! #15MinuteSuppers

This meal is super easy, it takes less then 15 minutes to make if you’ve got a spiralizer which makes the zucchini noodles much easier to make. If you do not have a spiralizer expect to take approximately 10 minutes to make the noodles using a potato peeler. You can also use your shredding feature on your food processor but that will result in angel hair like noodles and they will likely be shorter. It will still work though and would be faster then peeling them.
This week’s recipe is an Atkins and Liquid Amino Diet friendly meal. For Liquid Amino diet’s very low calorie phase you will need to leave out the Parmesan cheese, you may add a little bit of cottage cheese for the same effect. Make sure the cottage cheese has been drained and that the curds are thoroughly processed into the pesto.
The pesto is easy to make when you use Gourmet Garden herbs. it’s just a matter of squeezing out the appropriate amount and combining some essential ingredients to make a killer pesto. But don’t think these herbs are only fit for pesto, you can make so much more with these.
Mini sweet peppers add color and added sweetness to the meal. You can find bags of mini sweet peppers at most grocery stores for around $4 a bag and they can be used in lots of dishes from salads to stir fry.
Zucchini noodles are a great way to save calories and get your veggie intake for the day. You can use them with spaghetti sauces and they taste quite good or do like we did here and go for a pesto sauce. The noodles easily soak up the herbs and taste amazing.
- Approximately 5 small zucchini peeled and spiralized
- 5 thinly sliced sweet mini bell peppers
- 1/4 cup Gourmet Garden Basil
- 1 tablespoon Gourmet Garden Garlic
- 1/4 cup Parmesan cheese
- 1/8 cup, plus 2 tablespoons olive oil
- 1 tablespoon almond meal or freshly crushed almonds
- In a bowl combine basil, garlic, oil, almond meal and cheese. Stir well and set aside. Spiralize zucchini using a spiralizer or if you don’t have one use a potato peeler or food processor. These steps should take no longer then 10 minutes tops.
- Heat a skillet with remainder of olive oil and add zucchini and sweet bell peppers. Saute mixture for 3 minutes and then add pesto and stir for 2 more minutes until pesto is thoroughly mixed into zucchini noodles.
