
Peppermint Russian Tea Cakes
Tea cakes are a favorite in Russia but they are traditionally kind of plain so in this recipe we have livened them up a bit so they are gift box ready. Gifting homemade cookies during the holiday season will save you money plus friends and family love homemade goodies so its a win win. You may want to make extra because once you try these you will be reaching for more.
Ingredients
½ cup margarine softened
1/2 cup powdered sugar
1 tsp good quality peppermint extract
2 cups white flour sifted twice
powder sugar and red finely ground sprinkles for dusting
Directions
Mix together margarine, powdered sugar and peppermint extract and then sift in the white flour, folding it into the margarine mixture. Form into a ball, if you find the ingredients to be too dry you may had up to 1 tbsp of warm water.
Place in a preheated oven set to 350 degrees and cook for 15 minutes or until lightly brown. While cookies are cooking pour ½ cup powdered sugar out on a plate and sprinkle 1 ½ tablespoons red sprinkles and fold in. Once cookies are out of the oven roll each one into the powdered sugar mixture while still being hot. Set down to cool for 30 minutes and then box them up or freeze.
