6-Minute Instant Pot Spanish Red Quinoa
I purchased an Instant Pot a couple weeks ago to make cooking meals easier since I have gone back to work full time. I did not expect to fall in love with it like I have. I have fallen completely head over heels for this thing.
I really thought I would use it to cook beans to make hummus, refried beans, black bean soup, and to cook rice quickly. I didn’t expect to be using it as much as I am but it really makes dinner so much faster. It’s got some nice features such as keeping food warm and sauteing food in the pot before sealing it. You can make yogurt but I have not tried it yet. What I love best is the ability to cook rice, quinoa, couscous, and beans in under 10 minutes. And when I am talking about beans I mean those bags of beans that are dry, not cans. Of course I am all about the one pot meals. The less dishes to wash the better!
This 6 Minute Instant Pot Spanish Red Quinoa was a hit with my family
Ingredients
1 cup Beef Broth
1 lb ground beef
1 cup red quinoa
1 red bell pepper
1tsp chili powder
1 tsp paprika
1 tsp cumin
1 tsp coriander
1tsp salt
1tsp pepper
Instant Pot Directions
Set Instant Pot to saute and wait for it to get hot. Cook ground beef until 3/4 cooked and then add all spices. Add in chopped bell pepper and saute for 1 minute. Turn Instant Pot off. Add Red Quinoa to Instant Pot and then 1 cup beef broth and stir contents. Place the Instant Pot lid on, close, and turn button to seal. Set Instant Pot to Manuel 6 minutes and then once it beeps let it natural depressurize for 10 minutes.
