Salsa Chicken Bake ~ Feed a family of 4 for less than $4.00
At Fuggs and Foach, we all know I am not a good cook. I love my crockpot for the set and forget way of cooking. Less likely I will mess something up .Tonight I am trying to make Salsa Chicken Bake. This means I can’t dump and let things sit in the crockpot. I had to follow a recipe now that is always a stress for me but this one is very easy.
Ingredients
2/3 cup Pancake Mix of choice (Big Box is $3.99 with coupons.. this is like $.25 for cost)
2 tbs Water (FREE)
1 Egg ($.18 cents)
1 1/2 cups Shredded Cheddar cheese ($1.50)
3 Boneless, skinless chicken breast halves, cut into 1/2″ pieces (1.99)
2 tsp Vegetable Oil ($.12)
1 1/4 cups Salsa of choice (FREE with coupons and sale)
2 tbs Water (FREE)
1 Egg ($.18 cents)
1 1/2 cups Shredded Cheddar cheese ($1.50)
3 Boneless, skinless chicken breast halves, cut into 1/2″ pieces (1.99)
2 tsp Vegetable Oil ($.12)
1 1/4 cups Salsa of choice (FREE with coupons and sale)
Total cost $4.04 ( Ok I lied not less than $4.00 but who wants to see or say $4.04 cents.. lol)
Preparation
Heat oven to 400. Spray 8″ or 9″ square pan. Stir together Bisquick mix, water and egg. Spread in pan; Sprinkle with 1 1/4 cups of the cheese.
NOTES: This is not easy to mix and I was upset about the lumps. I think I didn’t get all of them out.
Cook and stir hicken in oil over meduim-high heat until outsides turn white; drain. Stir in salsa; heat until hot. Spoon over batter in pan to within 1/2″ of edges.
NOTES: I cheated and had my husband cook this last night. Cooking chicken for me would lead to an ER visit. NOT very romantic.
Bake 22-25 minutes or until edges are dark golden brown. Sprinkle with remaining cheese. Bake 1-3 min. or until cheese melts; loosen from sides of pan.

I am always looking for new recipes to make for my family! I like to try a variety of recipes, so they don’t get bored with the same old things! This looks amazing and I think my family would really love it! I love being able to cook in my crock pot too! Do you use corn or flour tortillas?
