Cranberry Muffins Recipe, Using Thanksgiving Leftovers

cranberry muffins

This post is part of my 12 days of Thanksgiving leftovers. Everyday a new recipe will be featured that uses feast leftovers from Thanksgiving. Don’t throw away your leftovers, instead reinvent them! Got leftover cranberry sauce? Make this delightful cranberry muffin and freeze for a quick dessert or breakfast cheat.

2 cups white flour
1 cup cranberry sauce
1/2 cup white sugar
1/4 cup oil
1/2 cup milk
1 teaspoon vanilla
1/2 teaspoon cinnamon
1/2 teaspoon baking soda
1 teaspoon baking powder
1 egg

Mix ingredients together well and put in greased cupcake pan. I used a Good Cook non stick muffin pan and my muffins slid right out with no struggle. Bake on 350 for 25 minutes or until a toothpick comes out clean.
