This week I have teamed up with to talk about what comfort food means to me. Over the years my thoughts on what comfort foods are and what they mean to me have evolved. Especially since I became more of a foodie. I still find myself going back to the more traditional comfort foods I was brought up eating. My family loves comfort food, and with fall just around the corner the rain is going to start any day now. One of my favorite things to eat during the colder months is fried chicken. I am trying to eat healthier though, so fried anything is currently off limits. Thus this fresh and light chicken pasta dish came to life – my new comfort food. For me, comfort food is food that is cooked at home, hearty, and fresh. Whereas traditional comfort food is heavy and rich, my new comfort food uses lighter, fresh ingredients. Like baked chicken dishes, fresh new soups loaded with vegetables, even Chicken tacos. Just switching out a few ingredients for lighter healthier ones makes a huge difference, while still being comfort food. In this recipe, I even use Greek yogurt instead of cream for a lighter, healthier spin.

Chicken Pasta in Fresh Greek Yogurt Using Foster Farms Simply Raised Chicken
1 package Foster Farms Simply Raised Chicken Breast
1 package bow tie pasta
1 package green peas
1 yellow sweet pepper diced
1 single serving 2% Fage Greek yogurt
1 packet ranch dressing powder
1/8 cup bacon crumbles
1 tsp salt
1 tsp black pepper
Directions
Boil pasta until al dente. While doing that salt & pepper the chicken and bake on 375 for 15 minutes or until cooked through. Dice up chicken into cubes and set aside. Microwave peas for 1 minute. Dice up yellow bell pepper, 2 green onions, and set aside. Drain pasta and place in large bowl. Open Fage Greek Yogurt, toss in ranch powder and stir well. Toss in diced veggies into bowl with the pasta. Add diced chicken, and pour in Fage Green Yogurt mixture. Stir very well ensuring pasta is well coated. You can stir in 1/8 or less whole milk to the mixture to add creaminess if you would like. Toss in 1/8 cup of bacon bits and stir well. Refrigerate for 1 hour prior to serving. ENJOY!
